An intensive brewing workshop that will share every innovation and insight taken by Jem Challender across 6 months of training for the World Brewer’s Cup and 15 years working as a barista in London. Jem is a founding director and Head of Training and Innovation at Prufrock Coffee in London. He will teach us what methods he uses in sourcing, roasting, filtering and shaking filter coffee to arrive at a level of quality he is ready to present it to a World Brewer’s Cup sensory panel. Jem will present innovations in areas of post-roast processing and winnowing, low RPM re-grinding and fines reduction techniques, pressurised immersion brewing and advanced filtration media which should present you with cuppings throughout the workshop that will deliver transparency and flavour clarity in natural process Panamanian Geisha that you have not encountered before.
