Scott Rao makes his third visit to Prufrock next week. He is the world’s preeminent coffee educator and has had more influence on the way we do things at Prufrock and the way we teach, than anyone else we can think of. His self published books are an accelerator for developing a modern barista technique, and form a core part the knowledge and skill set that will bring a coffee business into profit. Scott operates a global coffee consultancy covering all aspects of the coffee chain from sharpening up a cafe work flow to designing roasteries and improving the stability of a roasting companies offering.
What really makes this talk so interesting this time is Scott’s conviction that batch brewing can be just as consistent, scale-able and possible to make delicious coffee from as hand-brewed coffee. So for cafes and brew bars that strive to keep up with the customer demand for efficiency and hunger for the quality and ease that the big batch brewers promise to deliver, Scott is here to myth-bust and challenge notions that many of us, (including Prufrock) since the glory days of the Penny University have held dear. Batch brew vs. hand brew? For Scott this is not a debate at all, this is a question of logic, science and flavour. Come and meet him; he can be unnervingly kind and patient as he cuts through any misguided notions left there by traditions and conceits as he gets you to appreciate the bare bones of brewing.
